I did my volunteer service August 2014-2015 in Malawi.
I was part of the German government program "weltwärts". My organization was Kolping Jugendgemeinschaftsdienste. When people asked me what I was doing in Malawi, I used to answer:

"I am working at a Primary School."
- "Oh, are you a teacher?"
"No, I am trying to teach."

LESSON

1) What are the three pillars of kitchen hygiene?



Give instructions for personal hygiene in the kitchen!
  • Wash your hands after visiting the toilet
  • Cut your fingernails
  • Tie back your hair or wear a head scarf
  • Wear clean clothes and a clean apron
  • Do not handle food when you are sick

Give instructions for proper handling of food!

  • Store food in dry, clean and cool places
  • Store cooked food seperatedly from raw food
  • Cook perishable food soon
  • Do not leave food uncovered

Give instructions for keeping a kitchen clean and safe!

Poster: What can we improve in this kitchen?
  • Cover, empty and wash kitchen bins
  • Open the windows
  • Wash all utensils
  • Tidy up
  • Wipe working surfaces
  • Sweep and mop the floor

Weekly:
  • remove stains from walls and surfaces

  • remove cobwebs and soot

2) Activity: Practicing kitchen hygiene and safety


I let my learners help out in the kitchen to serve the porridge, watching aspects of hygiene (for those who are serving, we make hats out of newspaper to keep the hair from falling into the porridge). After porridge, another group has to clean the kitchen and the used utensils.
